A good friend gave me this recipe- she makes and serves it a lot-- it is absolutely delicious! It makes a ton, so if you have leftovers at a get-together, send your guests home with some, it won't keep that long.
Black Bean Salsa
1 can black beans
1 can kidney beans
1 can shoepeg corn
1 can yellow corn
1 red pepper
1 yellow pepper
1/2 of a medium purple onion
Fresh cilantro (to taste)
Fresh basil (to taste)
1 jalapeo
1 regular-size bottle Italian dressing
Drain each can: black beans, kidney beans, shoepeg corn, and yellow corn. Chop red and yellow peppers and purple onion into bite size pieces (about the size of a kidney bean). Coarsely chop cilantro and basil. Dice jalapeo into tiny pieces. Combine all prepared ingredients together in large bowl. Add Italian dressing and toss to coat. Serve with tortilla chips. Refrigerate leftovers and eat within a few days.
